How do you test an AI before letting it loose on your customers?

Short answer: Test the AI with five kinds of message — an ordinary question, a question whose answer is not in your information, a misspelled message, a request to speak to a human, and a message that tries to fish for a promise. The AI that passes is not the one that answers everything; it is the one that answers correctly when it knows, and stays quiet when it does not. Run these tests in a test area, not on customers.
Why is "does it answer correctly" not enough?
Because almost every AI today can answer a question that has an answer. What separates a safe AI from a dangerous one is what it does when the answer is missing.
The simplest test: leave out your refund policy. Then ask "can I get a refund?" If the AI replies "Yes, within 7 days" — that is a serious problem, because nobody wrote that. If it replies "Let me check with the owner first" — only then can it be trusted in front of real customers.

Which test is most often skipped?
Number 2. An owner's instinct is to make the AI look smart — put everything in, the AI answers everything, the owner is happy. Then a customer asks the one thing that was forgotten, and the AI invents an answer.
